Craft manufacturing possible for Fulton Market

The Chicago Tribune has reported that a craft distillery and brewery is in the works for the city’s West Loop area.

Set to be located in a former 15,000 sq. ft. truck rental facility on W. Kinzie St., Blind Pig Distilling could be open to produce gin and various types of whiskey, alongside a “yet to be determined craft brewery within the same building” by next summer.

The paper quotes president and CEO of parent company Liquid Brand Assets, Marc Bushala, as saying the distillery would join the company of similar destinations, allowing visitors to tour the facility and sample brands. “Blind Pig would be a sort of “incubation lab” for spirits,” Bushala said. “This gives us the opportunity to try new things. … We can create products we want to create and take risks.”

Curbed Chicago says the property is well suited to manufacturing and that its location offers both high visibility and the potential for expansion through its adjacent 16,000 sq. ft. parking lot. The site is located steps from $200 million worth of new office space and a proposed 373-unit residential tower.
